Exhausted

Wow. The last couple of days have been seriously rough. Part of it might be that I have my period... but I also think a lot of it is the fact that we've been cooking grains for the last 48 hours. Too many carbohydrates...

Yesterday we had a very intense Basic Quality Ingredients lecture on meat, dairy, and eggs... The professor, and I won't name names, is just not very good. She's loud, opinionated, and just not well informed. She spends a lot of time telling us what is "good" and what is "bad" and what we "should" and "shouldn't" eat... but then when asked any questions about the reasoning behind these things, she says she has to "look into it." I'm sorry... am I paying an insane amount of money to be educated about these things BY YOU or not?? WHY IS THIS WOMAN GETTING PAID?? She spends most of the time during the lectures telling us about how she cooked for Saudi Arabian princesses.... I mean, who cares? Seriously...

The afternoon was spent in Grain Demo, where the same instructor cooked numerous types of grains for us. We spent about 3 hours tasting every kind of cooked grain you can think of: kasha, millet, quinoa, barley, bulgur, all different kinds of rice, etc. etc. etc. I didn't eat any of the wheat based grains. But there was still a lot to eat. We were all seriously stuffed... and the worst kind of heavy-stomach stuffed since it was all grains. I thought most of the class was going to vomit, haha.

But the highlight of the afternoon was when we got to smoosh the cooked sweet brown rice into mochi batter (super sticky savory or sweet treats that are Japanese), and then she made little balls out of the batter, rolled them in arrowroot, and deep fried them in coconut oil. The we got to dip them in brown rice syrup. WOW were those delicious! I am totally making them some time soon!

Today we had lectures on table service and stewarding to prepare us for the Friday Night Dinners we have to serve at. These were pretty boring... but the time sitting down was well spent because we then spent 4 hours on our feet cooking grains. Now, I don't know about all of you... but I really stink at making rice. I don't think I have ever once made it perfectly. It ALWAYS comes out wet or sticky... it's never fluffy and beautiful. I am SO excited to have finally figured out how to make perfect rice!! Yay!!!

After we had all made 8 different kinds of grains, the instructor split us into 4 groups to make 4 different recipes with them. Our group was given Wild and Long Grain Rice Salad. It had Wild rice, long grain brown rice, celery, radish, parsley, currants, and toasted walnuts in it... all tossed w/ a rice vinegar/olive oil/mustard dressing. It was sooooo yummy!

The only downside is that now my fridge is filled with rice.... and I don't want to eat any of it! I am so full! And exhausted from eating such a carb heavy diet....

Tomorrow is Bean demo! Haha, at least I'll have something to eat with my rice...
