Quick Lunch

So I've been trying my darnedest to eat light and healthy lately... And with everything going on, it is sometimes difficult. The time crunch isn't so great for homemade deliciousness. BUT I discovered that if you chop one bell pepper, one small onion, a quarter cup of pickled jalapeno, and mix in about a tablespoon of the pickling liquid.... you get the easiest, tastiest salsa! I've been eating it on top of everything this week. Simple. And that is the name of the game, friends. Also, no oil or salt required, and it brightens up any salad, wrap, burrito, you name it! I detest out of season tomatoes, so this was a great solution for me to enjoy fresh "salsa" even when it's not quite summer!
