Food, Food, Food

OK.... I know, I know. I said gluten-free testing was being done. I have all of the ingredients. Ready to test. But somehow this past weekend got away from me. I got a surprise and last minute order for birthday cucpakes for a lovely Pioneer Valley baby celebrating his very first birthday. Obviously would never turn that down! Pancake Breakfast and Raspberry Lemonade special order!


And then... after all that.... Instead of gluten free, I made a week's worth of delicious meals. This is part of my New Year's Resolution to get back into making everything from scratch: "Enough take-out. Enough packaged, frozen convenience foods. I can cook. I have spent a lot of time learning how to cook. Use it, Ashley." That is what I tell myself.

So this weekend, Tyler and I toiled away at the following menu:
Tofu Ricotta and Fresh Basil Lasagna
Seitan Lime Soup
Cilantro Jalapeno Latkes
Chickpea Burgers with Mediterranean Salsa
Maple Mustard Seitan
2 loaves of Rosemary Garlic Bread
Herb Roasted Root Vegetables
Lemon Ricotta Cookies

All delicious. So great to be able to pack a healthy lunch each day with things that we've made that taste so so so good. But let me tell you, those cookies were showstoppers. Best I've eaten in a great, long while. The recipe was one that I found on pinterest. A Giada DeLaurentiis recipe, actually. ::sigh:: How I miss cable. Anyway, I highly recommend it. They are cake-like cookies. Dense but fluffy. And the lemon glaze is to-die-for.
