Smoothie Days

Since we are on a cupcake hiatus for the next month, I am introducing some non-cupcake related posts into the mix. Here's another recipe post!

As I have needed to get very, very little sleep and exert myself MUCH more than usual throughout this moving process, I have found that my go-to multiple cups of coffee were actually making the situation worse. I was exhausted less than an hour after drinking the coffee, and I was also getting the inevitable stomach aches one would clearly get from drinking that much acid-based liquid.

I decided I needed a HUGE boost of nutrients to balance this situation out... So I went on a 5-day fruit/veggie/nut smoothie fast. I am not particularly skilled on the smoothie front. I am often impatient and throw anything and everything into a smoothie as it's blending, resulting in a hideously brown, barely-drinkable sludge. However, my friend Aviva, who I met in culinary school, did a similar fast recently, and I knew she had been posting pictures of delicious-sounding smoothies on facebook. She helped me out with some recipes, and I cannot tell you how grateful I am! I am definitely going to have a smoothie for breakfast everyday now. It's such an amazing boost! And you're body doesn't waste as much energy trying to break down all the food in your digestive system since you're doing half the work by blending it!

Here's a recipe for my favorite (So far! There are so many to try!), ALL CREDIT TO THE LOVELY AVIVA!

Chocolate Raspberry Smoothie
1 cup So Delicious Coconut Milk (or other nondairy milk)
Handful of greens (kale, chard, spinach)
1 cup raspberries
1 tbsp ground flax seed
1-2 tbsp cacao powder
Stevia to taste (raspberries are tart!)
1-3 ice cubes
Scoop protein powder, optional

Place in your blender in the order of the ingredients listed, then blend until combined.

I am terrible at following recipes directly (mostly because I never have everything on hand, and I am too impatient to wait until I get all the ingredients), so in case you're thinking "I don't have some of these things... But I really want to make this!" here are some my adaptations from my limited pantry/fridge: I don't use Stevia so maple syrup was a nice touch. Same with protein powder so I used a tablespoon of almond butter instead. So yummy.
